About the Chef

Jessica Paholsky is the founder of Once Upon a Pesto, a global journey told through recipes, food history, and international cultures. She created this brand in 2016 while working at Rodale, Inc. as a video producer at Men’s Health magazine. Her inspiration for Once Upon a Pesto comes from her passion for the arts, experiences traveling as a Penn State student and a videographer at Travel for Teens, and profession as a storyteller. Jessica shares Once Upon a Pesto through a website and on several social media channels, and she hopes to one day publish her work as a cookbook.
